- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 can (15 oz) chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lemon juice
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent, about 5 minutes. Stir in garlic and cumin, cooking for 1-2 minutes until fragrant.
- Add chickpeas, stirring to coat in the mixture. Warm through for 3-4 minutes.
- Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes.
- Blend half the soup for a creamier texture, if desired, then return to pot.
- Stir in salt, black pepper, lemon juice, thyme, and red pepper flakes. Adjust seasoning as needed. Serve hot, garnished with parsley.
