  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent, about 5 minutes. Stir in garlic and cumin, cooking for 1-2 minutes until fragrant.
  2. Add chickpeas, stirring to coat in the mixture. Warm through for 3-4 minutes.
  3. Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes.
  4. Blend half the soup for a creamier texture, if desired, then return to pot.
  5. Stir in salt, black pepper, lemon juice, thyme, and red pepper flakes. Adjust seasoning as needed. Serve hot, garnished with parsley.
