Garlic Chicken with Roasted Tomatoes & Pasta is a simple, wholesome meal with bold flavor in every bite.
Ingredients

- 1 chicken breast, cut into chunks
- 150g (about 5 oz) spaghetti
- 1 cup cherry tomatoes
- 1 cup kale, chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp grated parmesan
- Salt and black pepper, to taste
Instructions
- Preheat oven to 200°C (400°F). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Roast for 15–20 minutes until blistered.
- Cook spaghetti according to package instructions. Drain and set aside.
- In a skillet, heat 1 tbsp olive oil over medium. Add garlic and cook for 30 seconds, then add chicken and season with salt and pepper. Cook until golden and fully cooked through.
- Add kale to the skillet and sauté until wilted, 1–2 minutes.
- Toss spaghetti with the chicken, kale, and roasted tomatoes. Top with parmesan and cracked black pepper.
- Serve warm and enjoy immediately.
