Description

Garlic Chicken with Roasted Tomatoes & Pasta is a simple, wholesome meal with bold flavor in every bite.


Ingredients

Scale
  • 1 chicken breast, cut into chunks
  • 150g (about 5 oz) spaghetti
  • 1 cup cherry tomatoes
  • 1 cup kale, chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp grated parmesan
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 200°C (400°F). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Roast for 15–20 minutes until blistered.
  2. Cook spaghetti according to package instructions. Drain and set aside.
  3. In a skillet, heat 1 tbsp olive oil over medium. Add garlic and cook for 30 seconds, then add chicken and season with salt and pepper. Cook until golden and fully cooked through.
  4. Add kale to the skillet and sauté until wilted, 1–2 minutes.
  5. Toss spaghetti with the chicken, kale, and roasted tomatoes. Top with parmesan and cracked black pepper.
  6. Serve warm and enjoy immediately.
