- 1 tsp cornstarch
- 1.5 cups heavy cream (Can use half-and-half for a lighter version.)
- 0.5 cup unsalted butter (1 stick.)
- 5 cloves garlic, finely minced
- 1 tbsp chopped fresh thyme (Substitute with rosemary or sage for extra flavor.)

- 3 lb sweet potatoes, peeled and sliced thin (about 1/8-inch thick) (Slicing thinly ensures even cooking.)
- 1/3 cup fresh parmesan cheese, grated (Can substitute for a milder cheese for kids.)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, melt the butter over medium heat.
- Add the minced garlic and chopped thyme to the melted butter, cooking for about 2 minutes until fragrant.
- Stir in the heavy cream, cornstarch, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally until the mixture thickens slightly.
- In a greased baking dish, layer half of the sliced sweet potatoes, then pour half of the garlic cream mixture over them.
- Add the remaining sweet potatoes in another layer, followed by the rest of the garlic cream mixture.
- Sprinkle the grated parmesan cheese evenly on top.
- Cover the baking dish with aluminum foil and bake for 40 minutes.
- After 40 minutes, remove the foil and bake for an additional 20-30 minutes, or until the sweet potatoes are tender and the top is golden brown.
- Remove from the oven and let it sit for a few minutes before serving.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Substitute fresh thyme with rosemary or sage for extra flavor.
- For kids, a milder cheese can be used instead of parmesan.
