Description

Ingredients

  • 1.5 cups heavy cream (Can use half-and-half for a lighter version.)
  • 0.5 cup unsalted butter (1 stick.)
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme (Substitute with rosemary or sage for extra flavor.)

  • 3 lb sweet potatoes, peeled and sliced thin (about 1/8-inch thick) (Slicing thinly ensures even cooking.)
  • 1/3 cup fresh parmesan cheese, grated (Can substitute for a milder cheese for kids.)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, melt the butter over medium heat.
  3. Add the minced garlic and chopped thyme to the melted butter, cooking for about 2 minutes until fragrant.
  4. Stir in the heavy cream, cornstarch, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally until the mixture thickens slightly.
  5. In a greased baking dish, layer half of the sliced sweet potatoes, then pour half of the garlic cream mixture over them.
  6. Add the remaining sweet potatoes in another layer, followed by the rest of the garlic cream mixture.
  7. Sprinkle the grated parmesan cheese evenly on top.
  8. Cover the baking dish with aluminum foil and bake for 40 minutes.
  9. After 40 minutes, remove the foil and bake for an additional 20-30 minutes, or until the sweet potatoes are tender and the top is golden brown.
  10. Remove from the oven and let it sit for a few minutes before serving.

  • For a lighter version, use half-and-half instead of heavy cream.
  • Substitute fresh thyme with rosemary or sage for extra flavor.
