Ingredients

  • 1 pound dried linguini pasta
  • 1 pound large shrimp, peeled and deveined
  • Kosher salt
  • Black pepper
  • 2 small zucchini, thinly sliced
  • 1 shallot, finely chopped
  • 4 tablespoons salted butter
  • 2 cloves garlic, minced or grated
  • 2 tablespoons chopped fresh thyme
  • 1 pinch crushed red pepper flakes
  • 1/2 cup dry white wine
  • 1 zest and juice lemon
  • 1/2 cup fresh parsley, chopped
  • 1 tablespoon chopped fresh chives

Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguini according to the package directions until al dente, about 8-10 minutes. Remember to reserve 1 cup of the pasta cooking water before draining!
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the shrimp with kosher salt and black pepper, then add them to the skillet. Sear each side for about 2-3 minutes until they turn pink. Remove the shrimp and set aside.
  3. In the same skillet, add the remaining 2 tablespoons of olive oil along with the sliced zucchini and chopped shallots. Season lightly with salt and pepper. Cook for about 5 minutes until the zucchini is tender and shallots are translucent.
  4. Stir in the butter, garlic, thyme, and crushed red pepper flakes to the veggies. Cook for 1-2 minutes, or until fragrant. Pour in the white wine, along with the lemon zest and juice, and bring it to a gentle simmer.
  5. Add the cooked shrimp and linguini to the skillet, tossing everything together. If the sauce seems too thick, thin it out with a bit of the reserved pasta water. Finally, stir in the fresh parsley and chives.
