These fudgy brownie cookies combine the best of brownies and cookies with a rich, chewy center and crackly tops.
Ingredients

- 150g dark chocolate
- 60g unsalted butter
- 100g granulated sugar
- 50g brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 60g all-purpose flour
- 25g cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 100g chocolate chips or chunks
Instructions
- Melt dark chocolate and butter together in a heatproof bowl over simmering water or in the microwave. Stir until smooth and set aside to cool slightly.
- In a large bowl, whisk together granulated sugar, brown sugar, and eggs until light and creamy. Stir in vanilla extract.
- Pour the melted chocolate into the egg mixture and stir until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Add to the wet ingredients and mix just until incorporated.
- Fold in chocolate chips or chunks.
- Chill the dough for 20 to 30 minutes until slightly firm.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Scoop dough onto the sheet, spacing well.
- Bake for 10 to 12 minutes until tops are shiny and cracked.
- Cool on tray for 5 minutes before transferring to a wire rack.
