Description

Ingredients

  • 1 ½ cups granulated sugar
  • 2 cups all-purpose flour
  • 2 large eggs (lightly beaten)
  • 1 tablespoon vanilla
  • 2 teaspoons baking soda
  • ¾ teaspoon table salt
  • 16 ounces fruit cocktail with liquid (1 can undrained)
  • ½ cup unsalted butter (one stick = four ounces)
  • ½ cup light brown sugar (firmly packed)
  • 1 cup granulated sugar
  • 1 cup evaporated milk
  • 1 teaspoon vanilla
  • 1 ½ cups sweetened shredded coconut
  • ¾ cup pecans (chopped)

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Generously grease and flour a 9X13 inch baking pan.
  3. Add the granulated sugar, flour, lightly beaten eggs, vanilla, baking soda, salt, and fruit cocktail (including syrup) to a large bowl.
  4. Mix until well combined, using a rubber spatula to scrape the sides and bottom of the bowl.
  5. Pour the batter into the prepared pan.
  6. Place the pan on the center rack of the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Add the butter, brown sugar, granulated sugar, evaporated milk, and vanilla to a saucepan and bring to a boil.
  8. Add the shredded coconut and pecans to the mixture and continue to boil, stirring constantly for 2-3 minutes.
  9. Pour the mixture over the warm cake and spread into an even layer using a rubber spatula.
  10. Let the cake cool before serving.
