Ingredients
- 1 pork tenderloin (about 1.5 lbs)
- 1 cup all-purpose flour
- 2 large eggs
- 1.5 cups panko breadcrumbs

- 0.5 teaspoon garlic powder
- Vegetable oil for frying
Instructions
- Trim any silver skin from the pork tenderloin. Cut the tenderloin into 1-inch thick medallions.
- Place the medallions between two pieces of plastic wrap and gently pound them to about 1/2-inch thickness. This is for your crispy fried pork tenderloin.
- Set up three shallow dishes. In the first, place the flour seasoned with salt, pepper, and garlic powder. In the second, whisk the eggs. In the third, place the panko breadcrumbs.
- Dredge each pork medallion first in the seasoned flour, shaking off any excess.
- Dip the floured medallion into the whisked eggs, ensuring it’s fully coated.
- Finally, press the egg-coated medallion into the panko breadcrumbs, making sure it’s evenly covered for a crispy coating. Repeat with remaining medallions.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering (around 350°F or 175°C).
- Carefully place the breaded pork tenderloin cutlets into the hot oil, being careful not to overcrowd the skillet. Fry in batches if necessary.
- Fry for about 3-4 minutes per side, until golden brown and cooked through. The internal temperature should reach 145°F (63°C). This is key for juicy fried pork tenderloin.
- Remove the fried pork tenderloin from the skillet and place on a wire rack set over a baking sheet to drain any excess oil.
