Fresh Rainbow Fruit Kabobs with Fluffy Marshmallow Clouds

Description

A colorful and easy-to-make snack featuring fresh rainbow fruit skewered and topped with homemade fluffy marshmallow clouds. Perfect for parties, potlucks, or a sweet treat for kids.


Ingredients

  • Strawberries, hulled and halved
  • Orange segments, peeled and pith removed
  • Pineapple chunks, fresh or canned in juice
  • Green grapes, halved
  • Blueberries
  • Blackberries or raspberries (optional)
  • Wooden or bamboo skewers (6-8 inch length)
  • Unflavored gelatin powder (about 2 ½ teaspoons)
  • Cold water (½ cup or 120 ml, divided)
  • Granulated sugar (1 ½ cups or 300 grams)
  • Light corn syrup (1 cup or 240 ml)
  • Salt (¼ teaspoon)
  • Pure vanilla extract (1 tablespoon)
  • Powdered sugar and cornstarch mix (½ cup powdered sugar + ½ cup cornstarch for dusting)

Instructions

  1. Wash and dry all fruit thoroughly. Hull strawberries and slice in half if large. Peel and segment the oranges, removing as much of the white pith as possible. Cut pineapple into bite-size chunks. Halve grapes and rinse berries if using. Set aside and keep refrigerated until ready.
  2. In a small bowl, sprinkle gelatin over ¼ cup (60 ml) cold water. Let it bloom for about 10 minutes.
  3. In a medium saucepan, combine granulated sugar, corn syrup, salt, and ¼ cup (60 ml) water. Place over medium heat and stir until sugar dissolves. Clip a candy thermometer to the side and simmer without stirring until the syrup reaches 240°F (115°C), the soft-ball stage.
  4. Immediately pour the hot syrup into the mixing bowl with the bloomed gelatin. Using an electric mixer on low speed, gradually increase to high and whip until the mixture becomes thick, glossy, and nearly tripled in volume—about 10-12 minutes. Add vanilla extract during the last minute of whipping.
  5. Spray or lightly oil a 9×13 inch pan and dust with the powdered sugar and cornstarch mix. Pour the marshmallow mixture into the pan and smooth the top with a spatula. Dust the top with more powdered sugar mix. Let it set at room temperature for about an hour or until firm but springy.
  6. Turn the marshmallow slab out onto a parchment-lined surface dusted with powdered sugar and cornstarch. Use a sharp knife or cookie cutters to cut into small, fluffy cloud shapes. Dust edges again to keep them from sticking.
  7. Thread the fruit onto wooden skewers in rainbow order: strawberry, orange, pineapple, green grape, blueberry, and optional berries. Alternate sizes for balance. Finish each skewer with a fluffy marshmallow cloud on top, gently pressing to secure without squishing.
