- 2 cans (15 oz each) black-eyed peas, drained and rinsed
- 1 cup sweet corn kernels, fresh or frozen (thawed if frozen)
- 1 cup cherry tomatoes, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup jalapeño, seeded and diced (optional)
- 1/4 cup fresh cilantro, chopped
- 1/2 cup English cucumber, diced (optional)
- 1/3 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 tablespoon fresh lime juice
- 1 tablespoon honey or agave syrup
- 1 teaspoon garlic powder or 1 clove garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- Crumbled feta cheese (optional topping)
- Diced avocado (optional topping)
- Hot sauce (optional topping)
Instructions
- Measure out all ingredients and set up on your counter.
- Dice cherry tomatoes, red bell pepper, green bell pepper, red onion, jalapeño, cucumber, and cilantro.
- Drain and rinse black-eyed peas and corn in a colander under cold water.
- In a large mixing bowl, gently combine black-eyed peas, corn, tomatoes, bell peppers, onion, jalapeño, cucumber, and cilantro.
- In a small bowl or mason jar, whisk together olive oil, apple cider vinegar, lime juice, honey/agave, garlic powder/minced garlic, salt, pepper, and cumin. Taste and adjust seasoning if needed.
- Pour dressing over the veggie mixture and toss gently until coated.
- Cover and refrigerate for at least 1 hour for best flavor, or serve immediately.
- Just before serving, top with crumbled feta cheese, diced avocado, or a dash of hot sauce if desired.
- Serve chilled with tortilla chips, corn chips, veggie sticks, or as a side salad.
