Description

Ingredients

  • 2 cans (15 oz each) black-eyed peas, drained and rinsed
  • 1 cup sweet corn kernels, fresh or frozen (thawed if frozen)
  • 1 cup cherry tomatoes, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup jalapeño, seeded and diced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup English cucumber, diced (optional)
  • 1/3 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon garlic powder or 1 clove garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • Crumbled feta cheese (optional topping)
  • Diced avocado (optional topping)
  • Hot sauce (optional topping)

Instructions

  1. Measure out all ingredients and set up on your counter.
  2. Dice cherry tomatoes, red bell pepper, green bell pepper, red onion, jalapeño, cucumber, and cilantro.
  3. Drain and rinse black-eyed peas and corn in a colander under cold water.
  4. In a large mixing bowl, gently combine black-eyed peas, corn, tomatoes, bell peppers, onion, jalapeño, cucumber, and cilantro.
  5. In a small bowl or mason jar, whisk together olive oil, apple cider vinegar, lime juice, honey/agave, garlic powder/minced garlic, salt, pepper, and cumin. Taste and adjust seasoning if needed.
  6. Pour dressing over the veggie mixture and toss gently until coated.
  7. Cover and refrigerate for at least 1 hour for best flavor, or serve immediately.
  8. Just before serving, top with crumbled feta cheese, diced avocado, or a dash of hot sauce if desired.
  9. Serve chilled with tortilla chips, corn chips, veggie sticks, or as a side salad.
