Ingredients

- 1 lb chicken breast (diced)
- 1 cup rice (uncooked)
- 2 cups chicken broth
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp salt
- 1 cup black beans (cooked)
- 1 cup corn (canned or frozen)
- 1 cup salsa
- 1 cup cheddar cheese (shredded)
- 1 cup lettuce (shredded)
- 1 medium tomato (diced)
Instructions
- Heat olive oil in a skillet over medium heat. Add diced chicken and cook until browned.
- Add cumin, chili powder, and salt. Stir to combine.
- In a large pot, bring chicken broth to a boil. Add rice, reduce heat, and cover. Cook for 18-20 minutes until rice is tender.
- Once rice is cooked, fluff with a fork and mix in black beans, corn, and salsa.
- In a bowl, layer the rice mixture, followed by the cooked chicken.
- Top with shredded cheese, lettuce, and diced tomatoes.
- Serve immediately and enjoy!
