Ingredients

  • 1 lb chicken breast (diced)
  • 1 cup rice (uncooked)
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 cup black beans (cooked)
  • 1 cup corn (canned or frozen)
  • 1 cup salsa
  • 1 cup cheddar cheese (shredded)
  • 1 cup lettuce (shredded)
  • 1 medium tomato (diced)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced chicken and cook until browned.
  2. Add cumin, chili powder, and salt. Stir to combine.
  3. In a large pot, bring chicken broth to a boil. Add rice, reduce heat, and cover. Cook for 18-20 minutes until rice is tender.
  4. Once rice is cooked, fluff with a fork and mix in black beans, corn, and salsa.
  5. In a bowl, layer the rice mixture, followed by the cooked chicken.
  6. Top with shredded cheese, lettuce, and diced tomatoes.
  7. Serve immediately and enjoy!
