Ingredients

  • 2 medium ripe avocados
  • ½ cup (about 75g) crumbled full-fat feta cheese
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons fresh herbs (parsley, cilantro, or dill), chopped
  • Salt to taste
  • Black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
  2. Mash the avocado with a fork or potato masher until creamy but slightly chunky.
  3. Crumble the feta cheese into a small bowl, then fold it gently into the mashed avocado.
  4. Add fresh lemon juice, minced garlic, olive oil, and chopped herbs to the bowl and stir until combined.
  5. Season with salt and freshly cracked black pepper to taste; adjust lemon juice or salt as desired.
  6. Optionally, add a pinch of red pepper flakes and stir through for a little heat.
  7. Serve immediately or chill for 15-20 minutes to let flavors meld. Press plastic wrap directly on the surface if storing.
