Ingredients

- 2 medium ripe avocados
- ½ cup (about 75g) crumbled full-fat feta cheese
- 1 tablespoon fresh lemon juice
- 1 small clove garlic, minced
- 1 tablespoon extra virgin olive oil
- 2 tablespoons fresh herbs (parsley, cilantro, or dill), chopped
- Salt to taste
- Black pepper to taste
- Optional: pinch of red pepper flakes
Instructions
- Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
- Mash the avocado with a fork or potato masher until creamy but slightly chunky.
- Crumble the feta cheese into a small bowl, then fold it gently into the mashed avocado.
- Add fresh lemon juice, minced garlic, olive oil, and chopped herbs to the bowl and stir until combined.
- Season with salt and freshly cracked black pepper to taste; adjust lemon juice or salt as desired.
- Optionally, add a pinch of red pepper flakes and stir through for a little heat.
- Serve immediately or chill for 15-20 minutes to let flavors meld. Press plastic wrap directly on the surface if storing.
