Instructions

  1. Preheat your oven to 325°F (163°C) if cooking in the oven.
  2. Season the beef chuck roast generously with salt and pepper on all sides.
  3. In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
  4. Add the seasoned roast and sear it on all sides until browned (about 4-5 minutes per side). Remove the roast and set it aside.
  5. In the same pot, add the sliced onions and cook over medium heat, stirring occasionally, until they are caramelized and golden brown (about 15-20 minutes).
  6. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  7. Pour in the beef broth, white wine, and Worcestershire sauce. Stir to combine and scrape up any browned bits from the bottom of the pot.
  8. Add the thyme, rosemary, bay leaves, and return the browned roast to the pot.
  9. Oven Method: Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the roast is tender and easily pulls apart with a fork.
  10. Slow Cooker Method: Transfer the contents to a slow cooker, cover, and cook on low for 6-8 hours or on high for 4-5 hours.
  11. Once the roast is tender, remove it from the pot and let it rest for a few minutes before slicing.
  12. Serve the pot roast with the caramelized onions and broth spooned over the top. Garnish with chopped fresh parsley.
  13. If desired, top with grated cheese and serve with crusty bread for dipping.
