  • 2 pounds beef chuck roast
  • 4 cups beef broth
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 sprigs fresh thyme
  • Salt to taste
  • Black pepper to taste
  • 4 French rolls
  • 4 slices provolone cheese
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear the beef chuck roast on all sides until browned.
  2. Add sliced onion and garlic to the pot. Cook until fragrant and lightly golden.
  3. Pour in beef broth, Worcestershire sauce, soy sauce, and add thyme sprigs. Stir to combine.
  4. Lower heat, cover, and simmer beef for about 3 hours, until tender enough to shred.
  5. Remove beef from the pot and shred using two forks. Strain the broth and keep warm for the au jus.
  6. Slice French rolls in half. Place provolone cheese on the bottom half and briefly toast until melted.
  7. Pile shredded beef over the melted cheese. Place the top half of the roll.
  8. Serve each French dip sandwich with a small bowl of warm au jus for dipping.
