Instructions

  1. Preheat oven to 180°C (350°F).
  2. Season chicken with salt and pepper and set aside.
  3. Cook bacon in a large ovenproof pot until crispy. Remove and set aside.
  4. Brown chicken in the bacon fat for 5-6 minutes per side; remove and set aside.
  5. Sauté vegetables: Add onions, carrots, and garlic; cook until softened, about 5 minutes.
  6. Add mushrooms and cook until browned, then stir in flour to create a roux.
  7. Deglaze pot with red wine, scraping up brown bits, then add chicken stock. Simmer for 5 minutes.
  8. Return chicken and bacon to the pot. Add bay leaves and thyme.
  9. Cover and braise in the oven for 1 hour until chicken is tender.
  10. Remove herbs and adjust seasoning; serve garnished with parsley.
