- 750 milliliters Red Wine (Preferably Burgundy.)
- 2 cups Chicken Stock (Homemade stock is best.)
- 2 leaves Bay Leaves
- 1 teaspoon Thyme (Use dried thyme if fresh isn’t available.)
- 1 teaspoon Salt (Adjust according to taste.)
- 1 teaspoon Pepper (Adjust according to taste.)
- 2 tablespoons Fresh Parsley (Adds freshness to presentation.)
Instructions
- Preheat oven to 180°C (350°F).
- Season chicken with salt and pepper and set aside.
- Cook bacon in a large ovenproof pot until crispy. Remove and set aside.
- Brown chicken in the bacon fat for 5-6 minutes per side; remove and set aside.
- Sauté vegetables: Add onions, carrots, and garlic; cook until softened, about 5 minutes.
- Add mushrooms and cook until browned, then stir in flour to create a roux.
- Deglaze pot with red wine, scraping up brown bits, then add chicken stock. Simmer for 5 minutes.
- Return chicken and bacon to the pot. Add bay leaves and thyme.
- Cover and braise in the oven for 1 hour until chicken is tender.
- Remove herbs and adjust seasoning; serve garnished with parsley.
Notes
- This dish pairs well with crusty bread or mashed potatoes.
- Leftovers taste better the next day as flavors meld.
- Feel free to add other vegetables like potatoes or pearl onions.
