Delicious Freezer Breakfast Burritos for Busy Mornings

- 1 pound Frozen Tater Tots
- 1 tablespoon Olive Oil
- 1 pound Breakfast Sausage
- 6 large Eggs
- 1/2 cup Half and Half
- To taste Kosher Salt
- To taste Freshly Ground Black Pepper
- 1 can Refried Beans
- 4 large Flour Tortillas
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Monterey Jack Cheese
- 1 cup Roma Tomatoes
- 1/4 cup Chopped Fresh Cilantro Leaves
Instructions
- Preheat your oven to 400°F (200°C) and lightly oil a baking sheet.
- Arrange frozen tater tots on the baking sheet and cook for about 20 minutes until crispy.
- Heat olive oil in a skillet over medium-high heat. Add breakfast sausage and cook for 3 to 5 minutes until browned.
- Whisk eggs in a bowl. Pour into the skillet and cook gently until just set. Stir in half and half and season with salt and pepper.
- Lay out each tortilla flat. Spread refried beans down the center. Layer tater tots, sausage and egg mixture, cheeses, tomatoes, and cilantro.
- Fold sides of each tortilla and roll tightly to form burritos. Place seam-side down on the baking sheet.
- Bake burritos for 12 to 15 minutes until heated through and tortillas are slightly golden.
- Serve immediately or let cool and store in an airtight container for freezing.
Notes
- Substitute diced roasted potatoes for tater tots if desired.
- Use turkey sausage for a lighter option.
- Omit tomatoes for a simpler burrito.
- Whole wheat tortillas can be used instead of flour tortillas.
