- 1 lb ground beef, 80/20 blend
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and freshly ground black pepper, to taste
- 1 tbsp Worcestershire sauce
- 1 lb boneless, skinless chicken thighs, finely chopped or ground
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 1 tbsp olive oil
- 2 cups cooked pulled pork (store-bought or homemade)
- 1/2 cup barbecue sauce
- 1 tsp apple cider vinegar
- 12 slider buns (soft brioche buns recommended)
- Pickles, sliced
- Coleslaw (optional)
- Cheese slices (cheddar for beef, pepper jack for chicken, or preferred kind)
- Butter, melted (for toasting buns)
Instructions
- Prepare the Beef Patties: In a large bowl, combine ground beef, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix gently to combine. Shape into 4 equal-sized small patties, about 3 inches wide and 1/2 inch thick. Set aside.
- Make the Chicken Patties: In another bowl, mix chopped or ground chicken thighs with smoked paprika, cumin, chili powder, salt, pepper, and olive oil. Form into 4 patties, similar size to the beef.
- Heat the Pulled Pork: In a small saucepan over low heat, combine pulled pork with barbecue sauce and apple cider vinegar. Stir occasionally until warmed through, about 10 minutes. Keep covered to retain moisture.
- Cook Beef Sliders: Heat a cast iron skillet or non-stick pan over medium-high heat. Place beef patties in the pan, cooking for about 3-4 minutes per side or until internal temperature reaches 160°F. Add cheese slices during the last minute of cooking if desired. Remove and rest on a plate.
- Cook Chicken Sliders: In the same pan (wipe out excess beef drippings if needed), cook chicken patties for about 5-6 minutes per side or until internal temperature reaches 165°F. Add cheese slices as with beef if desired. Rest briefly before assembling.
- Toast the Buns: Brush slider buns lightly with melted butter. Toast in a dry skillet or on a baking sheet in a 350°F oven for 3-5 minutes until golden and slightly crisp.
- Assemble the Sliders: Layer each bun bottom with the protein of choice, add pickles, a spoonful of coleslaw for pulled pork sliders, and top with the bun. Serve immediately.
