Ingredients

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp Worcestershire sauce
  • 1 lb boneless, skinless chicken thighs, finely chopped or ground
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 cups cooked pulled pork (store-bought or homemade)
  • 1/2 cup barbecue sauce
  • 1 tsp apple cider vinegar
  • 12 slider buns (soft brioche buns recommended)
  • Pickles, sliced
  • Coleslaw (optional)
  • Cheese slices (cheddar for beef, pepper jack for chicken, or preferred kind)
  • Butter, melted (for toasting buns)

Instructions

  1. Prepare the Beef Patties: In a large bowl, combine ground beef, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix gently to combine. Shape into 4 equal-sized small patties, about 3 inches wide and 1/2 inch thick. Set aside.
  2. Make the Chicken Patties: In another bowl, mix chopped or ground chicken thighs with smoked paprika, cumin, chili powder, salt, pepper, and olive oil. Form into 4 patties, similar size to the beef.
  3. Heat the Pulled Pork: In a small saucepan over low heat, combine pulled pork with barbecue sauce and apple cider vinegar. Stir occasionally until warmed through, about 10 minutes. Keep covered to retain moisture.
  4. Cook Beef Sliders: Heat a cast iron skillet or non-stick pan over medium-high heat. Place beef patties in the pan, cooking for about 3-4 minutes per side or until internal temperature reaches 160°F. Add cheese slices during the last minute of cooking if desired. Remove and rest on a plate.
  5. Cook Chicken Sliders: In the same pan (wipe out excess beef drippings if needed), cook chicken patties for about 5-6 minutes per side or until internal temperature reaches 165°F. Add cheese slices as with beef if desired. Rest briefly before assembling.
  6. Toast the Buns: Brush slider buns lightly with melted butter. Toast in a dry skillet or on a baking sheet in a 350°F oven for 3-5 minutes until golden and slightly crisp.
  7. Assemble the Sliders: Layer each bun bottom with the protein of choice, add pickles, a spoonful of coleslaw for pulled pork sliders, and top with the bun. Serve immediately.
