- 8 oz raw shrimp, peeled and deveined
- 3 large eggs, beaten (room temperature for fluffiness)
- 2 tablespoons vegetable oil or neutral oil (like canola)
- 3 cloves garlic, minced
- 1/2 cup diced carrots (fresh or frozen)
- 1/2 cup frozen peas (thawed)
- 3 green onions, sliced (white and green parts separated)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon toasted sesame oil
- Salt and freshly ground black pepper, to taste
Instructions
- Prep Ingredients (10 minutes): Peel and devein shrimp if needed. Dice carrots and slice green onions, separating whites and greens. Beat eggs in a bowl until smooth.
- Heat the Wok (2 minutes): Place wok over medium-high heat. Add 1 tablespoon vegetable oil and swirl it around until shimmering hot.
- Cook Shrimp (3-4 minutes): Add shrimp to the hot oil. Stir-fry until pink and opaque, about 2-3 minutes. Remove shrimp from wok and set aside.
- Scramble Eggs (2 minutes): Add another tablespoon of oil to the wok. Pour in beaten eggs and let sit briefly until they start to set around edges. Gently stir and fold eggs until softly scrambled but still moist. Remove and set aside with shrimp.
- Sauté Aromatics & Veggies (3 minutes): Add a touch more oil if needed. Toss in garlic and white parts of green onions, stir until fragrant (about 30 seconds). Add diced carrots and cook until slightly tender, about 2 minutes. Stir in peas and cook another minute.
- Add Rice (5 minutes): Break up any clumps of cold rice with your fingers or spoon. Add rice to the wok and stir-fry, tossing constantly to coat in oil and mix with veggies.
- Season & Combine (2 minutes): Pour soy sauce and oyster sauce over rice, stirring to distribute evenly. Return shrimp and eggs to wok. Toss gently to combine and warm through. Season with salt and pepper to taste.
- Finish with Sesame Oil & Green Onions (30 seconds): Drizzle toasted sesame oil over the rice. Sprinkle green onion tops and give one last toss.
- Serve Immediately: Transfer to plates or a serving bowl. Garnish with extra green onions or a wedge of lime if desired.
