Instructions

  1. Prepare the Filling: In a medium saucepan, combine short-grain rice and whole milk. Simmer on low heat for 30-40 minutes, stirring frequently until the mixture is creamy and thick. Season with salt and butter to taste, then allow to cool.
  2. Make the Dough: In a large mixing bowl, whisk together fine rye flour, plain white flour, and salt. Gradually add cold water, kneading the dough until it’s pliable and smooth. Divide the dough into 12 pieces and cover with a damp towel.
  3. Shape the Pastries: Roll each piece of dough into an oval shape. Spoon a generous amount of the rice filling into the center, pinching and crimping the edges to create a decorative wave.
  4. Bake: Preheat your oven to 275°C. Place a baking stone or sheet inside to heat up. Arrange the shaped pastries on the hot surface and bake for 10-12 minutes, until lightly browned.
  5. Prepare Munavoi: While the pastries are baking, mash the hard-boiled eggs with softened butter and salt until creamy for spreading.
  6. Serve: Brush warm pastries with melted butter, top with munavoi, and serve alongside coffee or pickled cucumbers.
