- 1 package (16 oz) potato gnocchi
- 1 cup fresh basil pesto (store-bought or homemade)
- 1 pint (10 oz) cherry tomatoes
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, about 2-3 minutes.
- While the gnocchi is cooking, heat olive oil in a large skillet over medium heat until hot.
- Add the cherry tomatoes to the skillet. Cook until they start to burst, about 3-5 minutes.
- Add the cooked gnocchi to the skillet with the cherry tomatoes. Pour in the pesto sauce and gently toss everything together for about 1 minute until well combined.
- Sprinkle salt and pepper over the mixture to taste. If desired, add freshly grated Parmesan cheese at this stage.
- Transfer onto plates or into bowls. Drizzle with additional olive oil if desired and garnish with extra Parmesan cheese before serving.
