Description

Festive Pesto Gnocchi with Cherry Tomatoes is a colorful and comforting dish that combines fluffy gnocchi with aromatic pesto and sweet cherry tomatoes.


Ingredients

  • 1 package (16 oz) potato gnocchi
  • 1 cup fresh basil pesto (store-bought or homemade)
  • 1 pint (10 oz) cherry tomatoes
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, about 2-3 minutes.
  2. While the gnocchi is cooking, heat olive oil in a large skillet over medium heat until hot.
  3. Add the cherry tomatoes to the skillet. Cook until they start to burst, about 3-5 minutes.
  4. Add the cooked gnocchi to the skillet with the cherry tomatoes. Pour in the pesto sauce and gently toss everything together for about 1 minute until well combined.
  5. Sprinkle salt and pepper over the mixture to taste. If desired, add freshly grated Parmesan cheese at this stage.
  6. Transfer onto plates or into bowls. Drizzle with additional olive oil if desired and garnish with extra Parmesan cheese before serving.
