Delicious Egg Salad Cob: Your New Go-To Comfort Meal

- 4 large Eggs
- 1/2 cup Mayonnaise
- 1 tablespoon Dijon mustard
- 1 cup Chopped celery
- 1/4 cup Fresh herbs (chives or dill)
- to taste Salt
- to taste Pepper
- 1 cob Crusty bread cob
Instructions
- Boil the eggs by placing them in a saucepan, covering with cold water, bringing to a boil, then simmering for 5 minutes. Cool and peel the eggs.
- Heat olive oil in a pan over medium heat, add diced onion and bacon, cooking until the onion is tender and bacon is golden, about 10 minutes. Let cool.
- Chop cooled eggs and combine with bacon mixture, sour cream, mayonnaise, dijon mustard, celery, chives, salt, and pepper. Mix well until creamy.
- Preheat oven to 180°C (160°C fan). Cut the top off the cob and hollow it out, leaving a 2cm border.
- Spread the torn bread chunks on a baking tray, spray lightly with olive oil, and bake for 20 minutes until golden. Place the cob in the oven for the last 10 minutes.
- Spoon the egg salad mixture into the hollow cob and garnish with reserved egg slices. Serve with toasted bread pieces and fresh vegetable sticks.
