Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1/3 cup honey
- 1/4 cup fresh lime juice (about 2–3 limes)
- Zest of 2 limes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
- 12–16 small corn or flour tortillas
- 1 avocado, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup crumbled queso fresco
- Lime wedges for serving
Instructions
- Make the marinade: In a large bowl, whisk together honey, lime juice, lime zest, olive oil, minced garlic, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, pepper, and red pepper flakes until well combined.
- Marinate chicken: Add chicken pieces to the marinade, ensuring each piece is well coated. Let marinate for at least 15 minutes, or up to 2 hours for deeper flavor.
- Cook the chicken: Heat a large skillet over medium-high heat. Remove chicken from marinade, reserving the liquid. Cook chicken for 6-8 minutes, stirring occasionally, until golden brown and cooked through (165°F internal temperature).
- Create the glaze: Pour reserved marinade into the pan and cook for 2-3 minutes, stirring constantly, until sauce thickens and becomes glossy. The chicken should be beautifully coated.
- Rest and serve: Remove from heat and let rest for 2 minutes. Warm tortillas and fill with glazed chicken, avocado, pickled onions, cilantro, and cheese.
- Finish: Serve immediately with lime wedges and your favorite salsa or hot sauce.
Notes
Storage: Cooked chicken keeps in refrigerator for up to 4 days. Reheat gently with a splash of lime juice.
