Easy Blackberry Pistachio Dream Bars feature a buttery shortbread-style crust topped with a creamy layer, juicy blackberries, and crunchy pistachios.

- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 3/4 cup unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blackberries
- 1/3 cup pistachios, shelled and roughly chopped
- 1 tablespoon granulated sugar (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper. Mix flour, powdered sugar, and salt, then cut in butter until crumbly. Press into pan and bake 15–18 minutes until lightly golden.
- Beat cream cheese until smooth. Add sugar, egg, and vanilla, mixing until creamy. Spread evenly over the warm crust.
- Scatter blackberries over the filling and gently press in. Sprinkle pistachios and optional sugar evenly on top.
- Bake 30–35 minutes until the center is set and edges are lightly golden.
- Cool completely, then refrigerate 1–2 hours before lifting out and slicing into bars.
