- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 2 cups powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
- Gel food coloring (pastel shades)
- Pastel sprinkles
- Sanding sugar
- Mini candy eggs
- Edible glitter
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Mix in egg and vanilla extract until fully combined.
- Gradually add dry ingredients to the wet mixture. Mix just until a soft dough forms.
- Wrap dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness and cut into Easter-themed shapes.
- Place on parchment-lined baking sheets and bake 8–10 minutes until edges are lightly golden. Cool completely.
- Whisk powdered sugar, milk, and vanilla until smooth. Divide and tint with pastel gel coloring.
- Spread or pipe icing onto cooled cookies and add sprinkles while icing is wet.
- Allow icing to fully harden before stacking or packaging.
