Description

The Easter Bunny Mimosa is a delightful cocktail blending fresh juices and sparkling wine, perfect for a vibrant spring brunch.

Ingredients

Scale
  • 1 cup Fresh Orange Juice (squeeze from Navel or Valencia oranges)
  • 1 cup Pineapple Juice (100% juice, preferably from a can)
  • 1 bottle Sparkling Wine (Extra Dry Prosecco or Brut Champagne)
  • 1 cup Sprinkles (jimmies or nonpareils)
  • 1 tablespoon Glue for Rim (honey, light corn syrup, or vanilla frosting)
  • 1 cup Whipped Cream (freshly whipped or high-quality canned)
  • 1 piece Bunny Peep (traditional or gourmet marshmallow)
  • 1 cup Ice (omit to avoid dilution)

Instructions

  1. Pour sprinkles onto a plate. Then, apply your chosen glue (honey, corn syrup, or frosting) to the outer rim of a glass. Dip the rim into the sprinkles and let it set for about 60 seconds.
  2. Chill all ingredients thoroughly. In the prepared glass, combine equal parts of chilled orange and pineapple juice. Carefully tilt the glass and gently pour in the sparkling wine to create a lovely layered effect.
  3. Dispense a generous swirl of whipped cream into the center of the drink. Place the bunny Peep on top and add some extra sprinkles for that finishing touch.
