  • 2 pounds Russet potatoes, peeled and quartered
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream, warmed
  • 2 large egg yolks
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Place the peeled and quartered potatoes in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  2. Drain the potatoes thoroughly and return them to the hot pot. Let them sit for a minute to allow excess moisture to evaporate.
  3. Mash the potatoes until very smooth. You can use a potato ricer for the smoothest texture.
  4. Add the softened butter to the mashed potatoes and mix until fully incorporated.
  5. Gradually beat in the warmed heavy cream until the mixture is smooth and creamy.
  6. In a small bowl, whisk together the egg yolks, salt, white pepper, and nutmeg (if using).
  7. Add the egg yolk mixture to the potato mixture and beat until everything is well combined and the Duchess Potatoes are smooth.
  8. Transfer the Duchess Potato mixture to a piping bag fitted with a star tip.
  9. Pipe swirls or rosettes onto a baking sheet lined with parchment paper.
  10. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until the edges are golden brown and crisp.
  11. Serve the Duchess Potatoes immediately.
