  • 1 cup fresh strawberries (sliced)
  • ½ cup heavy cream
  • 2 tbsp pistachio butter (or smooth almond butter for variation)
  • 1 tbsp honey or date syrup
  • ½ tsp vanilla extract
  • A pinch of sea salt
  • 2 whole fresh strawberries
  • ¼ cup crushed pistachios

Instructions

  1. In a bowl, whisk together the heavy cream, pistachio butter, honey (or date syrup), vanilla extract, and sea salt until smooth and creamy.
  2. Set aside in the fridge to chill while preparing the other layers.
  3. Chop the dark chocolate into small pieces and melt using a double boiler or microwave in 20-second intervals, stirring between each until smooth.
  4. Let it cool slightly to thicken for easier layering.
  5. Take a clear plastic or glass cup and drizzle a small amount of melted chocolate at the bottom.
  6. Add a layer of sliced strawberries, pressing them against the inner sides of the cup for a neat, visible pattern.
  7. Spoon a layer of the pistachio mousse over the strawberries, making sure it spreads evenly.
  8. Repeat the layering: chocolate drizzle, strawberries, pistachio mousse until the cup is nearly full.
  9. Pour a final smooth layer of melted chocolate over the top, ensuring a thick, glossy coating that covers the entire surface.
  10. Let it set for a few minutes until slightly firm.
  11. Sprinkle crushed pistachios generously over the chocolate layer.
  12. Place two whole fresh strawberries on top for a perfect finishing touch.
