  • 0.33 cup pistachio cream (imparts a nutty flavor)
  • 2 tbsp tahini (adds creamy, nutty depth)
  • 1 pinch sea salt (elevates the flavor)

Instructions

  1. In a medium pan over medium heat, melt the unsalted butter. Add the kataifi pastry, stirring constantly for about 8-10 minutes, until golden brown and crispy.
  2. In the same pan or a bowl, mix the toasted kataifi, pistachio cream, and tahini together. Set the mixture aside to cool for a few minutes.
  3. In a double boiler or microwave, melt the semi-sweet chocolate with the coconut oil. Use 30-second bursts in the microwave, stirring in between until fully melted and smooth.
  4. Line a muffin tin with cupcake liners. Spoon about 1 to 1½ tablespoons of the melted chocolate into each liner, tilting them to coat the sides slightly. Freeze the tray for 5 minutes or chill in the fridge until set.
  5. Once the chocolate shell is cooled, add about 1 to 1½ teaspoons of the kataifi filling into each chocolate-coated liner. Gently press down with the back of a spoon to pack it in.
  6. Cover each filled liner with more melted chocolate to fully enclose the filling. Tap the tray gently to release any air bubbles trapped inside.
  7. Refrigerate the cups for about 30 minutes until fully set. Optional: Drizzle additional melted chocolate on top and sprinkle with crushed pistachios and a hint of sea salt for an exquisite finish.
