Instructions
- In a medium pan over medium heat, melt the unsalted butter. Add the kataifi pastry, stirring constantly for about 8-10 minutes, until golden brown and crispy.
- In the same pan or a bowl, mix the toasted kataifi, pistachio cream, and tahini together. Set the mixture aside to cool for a few minutes.
- In a double boiler or microwave, melt the semi-sweet chocolate with the coconut oil. Use 30-second bursts in the microwave, stirring in between until fully melted and smooth.
- Line a muffin tin with cupcake liners. Spoon about 1 to 1½ tablespoons of the melted chocolate into each liner, tilting them to coat the sides slightly. Freeze the tray for 5 minutes or chill in the fridge until set.
- Once the chocolate shell is cooled, add about 1 to 1½ teaspoons of the kataifi filling into each chocolate-coated liner. Gently press down with the back of a spoon to pack it in.
- Cover each filled liner with more melted chocolate to fully enclose the filling. Tap the tray gently to release any air bubbles trapped inside.
- Refrigerate the cups for about 30 minutes until fully set. Optional: Drizzle additional melted chocolate on top and sprinkle with crushed pistachios and a hint of sea salt for an exquisite finish.
