  • 2 tablespoons brewed coffee (cooled)
  • 0.25 teaspoon vanilla extract (optional for flavor)

Instructions

  1. In a medium-sized bowl, whisk the sifted all-purpose flour, baking powder, and salt until fully combined.
  2. In a small bowl, dissolve the instant espresso powder in 1 teaspoon of hot water and let it cool.
  3. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer for about 3-5 minutes.
  4. Add the large egg, egg yolk, and vanilla extract one by one, beating well after each addition.
  5. Pour in the cooled brewed coffee and the cooled dissolved espresso paste, mixing until just combined.
  6. Gradually add the whisked flour mixture to the wet ingredients, mixing on low speed until just combined.
  7. Gather the dough into a disk, wrap it tightly in plastic wrap, and refrigerate for at least 1-2 hours.
  8. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
