  • 1/4 cup (28g) unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 2 large eggs
  • 1/3 cup (80ml) maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) melted coconut oil
  • 1 cup (100g) shredded zucchini, squeezed dry
  • 1/2 cup (85g) dark chocolate chips or chunks

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners.
  2. Shred zucchini and squeeze out excess liquid using a towel or cheesecloth.
  3. In a large bowl, whisk almond flour, cocoa powder, baking soda, and salt.
  4. In another bowl, whisk eggs, maple syrup (or honey), vanilla, and coconut oil until smooth.
  5. Stir wet mixture into dry until just combined. Fold in zucchini and chocolate chips.
  6. Divide batter among muffin cups. Bake 18–22 minutes, or until a toothpick comes out mostly clean.
  7. Let cool 5 minutes in pan, then transfer to a wire rack to cool fully.
