Description
Dorito Casserole is a cheesy, beefy, Dorito-loaded dish perfect for parties or a laid back dinner.
Ingredients

- 1 lb lean ground beef (or any ground meat of your choice)
- 1/2 cup chopped yellow onion
- 1 (15 oz) can black beans (drained)
- 1 (14.5 oz) can fire roasted diced tomatoes (drained)
- 1 (10.75 oz) can Fiesta Nacho Cheese Soup
- 1 cup corn (fresh, frozen, or canned (drain it!))
- 1 (4 oz) can diced green chiles
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped green bell pepper
- 1 oz taco seasoning packet (hot or mild)
- 9 1/4 oz bag of Nacho Cheese Doritos (crushed)
- 3 cups shredded cheddar cheese
- 1 cup chopped tomatoes (or Pico de Gallo)
- 1/2 cup sour cream
- 1/2 cup guacamole
- 3 tablespoons freshly chopped cilantro
Instructions
- Preheat the oven to 350°F. Grease a 9×13 casserole dish with non-stick spray and set aside.
- In a large skillet, add the ground beef and onions. Cook for 7 to 10 minutes, until the juices run clear. Drain any excess grease.
- Add the black beans, fire-roasted tomatoes, nacho cheese soup, corn, green chiles, peppers, and taco seasoning. Cook for 3 minutes, stirring often. Remove from heat.
- In the prepared baking dish, layer 1/2 of the Doritos, then 1/2 of the meat mixture, and then 1/2 of the cheese. Repeat the steps, ending with cheese.
- Bake for 15 minutes, until heated through and the cheese is melted. Let rest for 5 minutes. Top with desired toppings and serve immediately!
