- 2 medium cucumbers, sliced thin
- 1 each red, yellow, and orange bell pepper, thinly sliced
- 1 cup snap peas, trimmed
- ½ small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- ½ cup fresh cilantro, chopped
- ½ cup crumbled feta cheese (optional)
- 3 tablespoons fresh lemon juice
- ⅓ cup extra virgin olive oil
- 1 tablespoon honey
- 1 small clove garlic, minced
- Salt and freshly ground black pepper to taste
Instructions
- Chop your veggies: slice cucumbers, bell peppers, and red onion thinly; trim snap peas by snapping off the stem end and pulling the stringy bits if needed; halve the cherry tomatoes.
- Mix the dressing: in a small bowl or jar, combine lemon juice, olive oil, honey, minced garlic, salt, and pepper. Whisk or shake vigorously until emulsified. Adjust sweetness with more honey if needed.
- Toss the salad: in a large bowl, combine all chopped veggies and cilantro. Pour the dressing over and toss gently but thoroughly to coat without bruising.
- Add the finishing touch: sprinkle crumbled feta cheese on top if using.
- Serve immediately for maximum crunch or cover and chill in the fridge for 30 minutes to let flavors meld. Toss gently before serving.
