Description

A recipe for cinnamon rolls made with sourdough discard, offering a unique tang and depth of flavor. This recipe transforms leftover sourdough discard into delicious, soft, and slightly chewy cinnamon rolls, perfect for a comforting breakfast or treat.

Ingredients

  • All purpose flour: 3 cups
  • Sourdough discard: 1 cup
  • Milk: 1 cup
  • Unsalted butter: 6 tbsp
  • Granulated sugar: ½ cup
  • Brown sugar: ½ cup
  • Active dry yeast: 2 ¼ tsp
  • Egg: 1 large
  • Cinnamon powder: 2 tbsp
  • Salt: 1 tsp
  • Cream cheese: 4 oz
  • Powdered sugar: 1 cup
  • Vanilla extract: 1 tsp

Instructions

  1. Warm the milk slightly and stir in the yeast with a teaspoon of sugar. Let it sit until foamy.
  2. In a large mixing bowl, combine sourdough discard, sugar, egg, melted butter, and the milk yeast mixture. Mix until smooth.
  3. Add flour and salt gradually, mixing until a soft dough forms.
  4. Knead for about ten minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise until doubled in size.
  6. Roll out the dough on a floured surface into a large rectangle.
  7. Spread softened butter evenly across the dough.
  8. Mix brown sugar and cinnamon, then sprinkle this mixture generously over the buttered dough.
  9. Roll the dough tightly into a log and cut it into equal sized rolls.
  10. Place the rolls in a greased baking dish, leaving a little space between each.
  11. Cover and let them rise again until puffy.
  12. Bake in a preheated oven at 350°F for about twenty five to thirty minutes until golden brown.
  13. While the rolls bake, prepare the frosting by beating cream cheese, butter, powdered sugar, and vanilla until smooth.
  14. Spread over warm rolls before serving.

Notes

  • Add chopped nuts like pecans or walnuts for crunch.
  • Drizzle with caramel sauce for extra richness.
  • Reduce sugar in the filling for a less sweet taste.
  • Add orange zest to the dough or frosting for an extra flavor burst.
  • Enjoy warm, fresh from the oven.
  • Reheat leftovers gently in the microwave or oven.
