A flavorful twist on traditional tacos featuring smashed chicken, dill pickles, and a crispy cheese lace shell.
Ingredients

- 1 lb ground chicken
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and black pepper
- 8 small tortillas
- 1 cup shredded mozzarella or Jack cheese
- 1/2 cup chopped dill pickles
- 2 tbsp pickle brine
- 1 cup shredded cabbage
- 1/2 cup cottage cheese blended with 1 tsp ranch seasoning and a squeeze of lemon
Instructions
- Mix ground chicken with garlic powder, paprika, salt, and pepper.
- Form into patties and cook in a skillet over medium heat until done.
- Remove from skillet and smash the cooked chicken.
- In the same skillet, sprinkle cheese to form a lace and cook until crispy.
- Warm tortillas in the skillet.
- Assemble tacos with smashed chicken, dill pickles, cabbage, and cottage cheese mixture.
- Top with crispy cheese lace and serve.
