- 1 tbsp Grated Ginger (Use fresh for vibrancy)
- 1 tbsp Erythritol (Keto-friendly sweetener)
- 1 tbsp Rice Vinegar (Apple cider vinegar works as a substitute)

- 1 large Cucumber (Slice thinly)
- 2 stalks Green Onions (Finely chopped)
- 1 tbsp Sesame Seeds (Optional garnish)
Instructions
- In a large skillet over medium-high heat, brown the ground beef for 5-7 minutes, breaking it apart until fully cooked.
- Stir in soy sauce, sesame oil, gochujang, minced garlic, grated ginger, erythritol, and rice vinegar. Let it simmer for 3-5 minutes until the sauce thickens.
- In a separate bowl, mix the thinly sliced cucumbers, finely chopped green onions, and sesame seeds. Toss gently to combine.
- Place the spicy beef mixture generously over the cucumber salad. Garnish with additional sesame seeds and green onions if desired.
