- 1 cup unsalted pistachios (shelled and finely ground)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter (softened)
- 3 large eggs
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon pistachio extract
- Chopped pistachios (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
- Incorporate the eggs one at a time, followed by the vanilla extract.
- Stir in the finely ground pistachios until well combined.
- Gradually add the dry ingredients to the wet mixture, alternating with a splash of milk (if needed), until just combined.
- Evenly distribute the batter between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- In a chilled bowl, beat the heavy whipping cream until soft peaks form.
- Gradually add powdered sugar and pistachio extract, continuing to whip until stiff peaks form.
- Place one cake layer on a serving plate. Spread a generous layer of pistachio cream frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining pistachio cream.
- Sprinkle chopped pistachios on top for decoration.
