Ingredients

  • 1 cup unsalted pistachios (shelled and finely ground)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 3 large eggs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon pistachio extract
  • Chopped pistachios (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Incorporate the eggs one at a time, followed by the vanilla extract.
  5. Stir in the finely ground pistachios until well combined.
  6. Gradually add the dry ingredients to the wet mixture, alternating with a splash of milk (if needed), until just combined.
  7. Evenly distribute the batter between the prepared cake pans.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  10. In a chilled bowl, beat the heavy whipping cream until soft peaks form.
  11. Gradually add powdered sugar and pistachio extract, continuing to whip until stiff peaks form.
  12. Place one cake layer on a serving plate. Spread a generous layer of pistachio cream frosting on top.
  13. Place the second cake layer on top and frost the top and sides of the cake with the remaining pistachio cream.
  14. Sprinkle chopped pistachios on top for decoration.
