  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (85g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) strong brewed espresso or coffee, cooled
  • 2 tablespoons Irish cream liqueur (optional)
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (115g) unsalted butter, softened (for frosting)
  • 2 cups (240g) powdered sugar, sifted (for frosting)
  • 2 tablespoons strong brewed espresso or coffee, cooled (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch (23×33 cm) baking pan with butter or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter and granulated sugar until combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract, cooled espresso, and Irish cream liqueur if using.
  3. In a separate bowl, sift together cocoa powder, all-purpose flour, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet mixture with a rubber spatula until just combined. Do not overmix.
  5. Pour the batter evenly into the prepared pan and smooth the top with a spatula.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let the brownies cool completely in the pan on a wire rack for at least 30 minutes.
  8. For the frosting, beat softened butter until creamy using an electric mixer. Gradually add powdered sugar alternating with cooled espresso, vanilla extract, and a pinch of salt. Beat until smooth and fluffy. Adjust consistency with coffee or powdered sugar as needed.
  9. Spread the frosting evenly over the cooled brownies. Slice into squares and serve.
