- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1/2 cup brown sugar, packed
- 2 tablespoons ground cinnamon
- 1/4 cup heavy cream
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix the graham cracker crumbs and melted butter until fully combined. Press this mixture into the bottom of a 9-inch springform pan to create an even crust layer. Set aside.
- In a large bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until smooth.
- In a small bowl, mix together the brown sugar and ground cinnamon.
- Pour half of the cheesecake batter over the crust. Sprinkle half of the cinnamon-sugar mixture over the batter. Repeat with the remaining batter and cinnamon sugar.
- Using a knife or skewer, swirl the cinnamon sugar into the cheesecake batter.
- In a small bowl, whisk together the heavy cream, cornstarch, and salt. Drizzle this mixture over the top of the cheesecake.
- Bake for 50-60 minutes, until the edges are set but the center jiggles slightly.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool.
- Refrigerate for at least 4 hours or overnight before serving.
