- 8 ounces cream cheese (225g), softened
- 1/4 cup unsalted butter (55g), softened
- 1 1/2 cups powdered sugar (180g), sifted
- 1 teaspoon vanilla extract (for frosting)
- 1 to 2 tablespoons milk (15-30ml)
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions (about 5 minutes). Lightly grease the grids with non-stick spray or brush with oil.
- In a large bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar.
- In a separate bowl, whisk the eggs, buttermilk, vegetable oil, red food coloring, and vanilla extract until smooth and well blended.
- Gradually add the wet mixture to the dry ingredients, stirring gently with a rubber spatula until just combined. Do not overmix; a few lumps are okay.
- Fold in the mini chocolate chips carefully to distribute evenly.
- Pour about 3/4 cup (180ml) of batter onto the center of the hot waffle iron, then close the lid. Cook for 4 to 5 minutes or until the waffle is crisp on the outside and springs back when touched.
- Carefully remove the waffle and place it on a cooling rack to keep crisp. Repeat with remaining batter, greasing the iron as needed.
- While waffles cook, prepare the cream cheese frosting: beat softened cream cheese and butter with an electric mixer until smooth (about 2 minutes). Gradually add powdered sugar and vanilla, mixing until fluffy. Add milk 1 tablespoon at a time until frosting reaches a drizzling consistency.
- Serve waffles warm, drizzled generously with cream cheese frosting. Optionally add fresh berries or a dusting of powdered sugar.
