- 100 g rolled oats
- 100 g spelt flour
- 50 g almond flour
- 15 g flax seeds
- 1 packet baking powder
- 1 egg
- 250 g low-fat quark
- 1 tsp salt
Instructions
- Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper, leaving some overhang on the sides for easy removal later.
- Combine the rolled oats, spelt flour, almond flour, flax seeds, baking powder, and salt in a large bowl. Whisk together until all dry ingredients are evenly distributed.
- In a separate bowl, beat the egg lightly, then stir in the quark until the mixture becomes smooth and creamy. A fork works perfectly for this step.
- Pour the wet ingredients into the dry mixture and stir until just combined. The batter will be thick and somewhat sticky.
- Transfer the batter to your prepared loaf pan and smooth the top with a spatula. Sprinkle a few additional oats on top before baking.
- Bake in the preheated oven for 45-50 minutes, or until the top turns golden brown and a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before using the parchment paper handles to lift it out. Allow it to cool completely on a wire rack before slicing.
