  • 50 g almond flour
  • 15 g flax seeds
  • 1 packet baking powder
  • 1 egg
  • 250 g low-fat quark
  • 1 tsp salt

Instructions

  1. Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper, leaving some overhang on the sides for easy removal later.
  2. Combine the rolled oats, spelt flour, almond flour, flax seeds, baking powder, and salt in a large bowl. Whisk together until all dry ingredients are evenly distributed.
  3. In a separate bowl, beat the egg lightly, then stir in the quark until the mixture becomes smooth and creamy. A fork works perfectly for this step.
  4. Pour the wet ingredients into the dry mixture and stir until just combined. The batter will be thick and somewhat sticky.
  5. Transfer the batter to your prepared loaf pan and smooth the top with a spatula. Sprinkle a few additional oats on top before baking.
  6. Bake in the preheated oven for 45-50 minutes, or until the top turns golden brown and a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for about 10 minutes before using the parchment paper handles to lift it out. Allow it to cool completely on a wire rack before slicing.
