Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 8 oz dark chocolate, melted and slightly cooled
  • 1/2 cup sour cream
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 1/2 cups fresh or frozen raspberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • Fresh raspberries for garnish
  • Dark chocolate shavings for garnish

Instructions

  1. Preheat oven to 325°F (165°C). Mix crust ingredients and press into a greased 9-inch springform pan. Bake for 10 minutes and cool.
  2. Cook raspberries, sugar, and lemon juice for 5–7 minutes. Strain and cool.
  3. Beat cream cheese until smooth. Add sugar, then eggs one at a time.
  4. Mix in melted dark chocolate, sour cream, cocoa powder, vanilla, and salt.
  5. Pour batter over crust. Spoon raspberry sauce on top and gently swirl.
  6. Place pan in a water bath and bake for 60–70 minutes until edges are set.
  7. Cool in oven with door cracked for 1 hour, then refrigerate at least 4 hours.
  8. Garnish and slice with a warm knife before serving.
