- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 8 oz dark chocolate, melted and slightly cooled
- 1/2 cup sour cream
- 1 tablespoon cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 1/2 cups fresh or frozen raspberries
- 2 tablespoons sugar
- 1 teaspoon lemon juice
- Fresh raspberries for garnish
- Dark chocolate shavings for garnish
Instructions
- Preheat oven to 325°F (165°C). Mix crust ingredients and press into a greased 9-inch springform pan. Bake for 10 minutes and cool.
- Cook raspberries, sugar, and lemon juice for 5–7 minutes. Strain and cool.
- Beat cream cheese until smooth. Add sugar, then eggs one at a time.
- Mix in melted dark chocolate, sour cream, cocoa powder, vanilla, and salt.
- Pour batter over crust. Spoon raspberry sauce on top and gently swirl.
- Place pan in a water bath and bake for 60–70 minutes until edges are set.
- Cool in oven with door cracked for 1 hour, then refrigerate at least 4 hours.
- Garnish and slice with a warm knife before serving.
