Instructions
- Thaw the puff pastry overnight in the refrigerator.
- Soak the dates in warm water for about 10 minutes, blend with tamarind paste, spices, and water until smooth.
- In a separate blender, combine garlic, Kashmiri chili powder, lime juice, sugar, and salt. Blend until smooth.
- Steam and mash the potatoes, mix in spices, melted butter, and a dollop of date chutney.
- Roll out the pastry, spread chili garlic chutney, layer potato filling, and sprinkle with peanuts. Roll tightly and slice into 1 inch rounds.
- Refrigerate the sliced pinwheels for at least 15 minutes.
- Bake in a preheated oven at 400°F (200°C) for 20-25 minutes until golden brown and crunchy.
- Garnish with chopped red onion, fresh cilantro, pomegranate seeds, and sev. Serve warm.
