  • ½ cup molasses
  • ½ cup milk, at room temperature
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 4 ounces cream cheese, softened
  • 1 tablespoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 24 tablespoons heavy cream, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and brown sugar for about 2 minutes until light and fluffy.
  4. Add molasses, milk, eggs, and vanilla extract, and mix thoroughly until fully combined.
  5. Gradually add the dry ingredients into the wet mixture, mixing until just combined. Do not over-mix.
  6. Divide the batter evenly among the cupcake liners, filling each about ¾ full.
  7. Bake for 19-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the cream cheese until fluffy, about 2 minutes.
  9. Add vanilla, cinnamon, and 2 tablespoons of heavy cream. Mix until smooth.
  10. Gradually add powdered sugar, mixing until smooth. Add more heavy cream if necessary to reach a spreadable consistency.
