Ingredients

  • 1 lb lamb, thinly sliced
  • 8 oz wide rice noodles
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tbsp cumin
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 cup sliced scallions
  • 1/4 cup chopped cilantro

Instructions

  1. Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the olive oil over high heat. Add the sliced lamb and cook for 2-3 minutes, until browned on the edges.
  3. Add the garlic, ginger, and cumin. Stir-fry for 1 minute until fragrant.
  4. Add the cooked noodles, soy sauce, and rice vinegar. Toss everything together for 2-3 minutes until the noodles are evenly coated.
  5. Remove from heat and stir in the scallions and cilantro.
  6. Serve hot and enjoy!
