Ingredients

- 1 lb lamb, thinly sliced
- 8 oz wide rice noodles
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tbsp cumin
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 cup sliced scallions
- 1/4 cup chopped cilantro
Instructions
- Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the olive oil over high heat. Add the sliced lamb and cook for 2-3 minutes, until browned on the edges.
- Add the garlic, ginger, and cumin. Stir-fry for 1 minute until fragrant.
- Add the cooked noodles, soy sauce, and rice vinegar. Toss everything together for 2-3 minutes until the noodles are evenly coated.
- Remove from heat and stir in the scallions and cilantro.
- Serve hot and enjoy!
