Ingredients

  • 4 cups grated zucchini
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup chopped onion
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the grated zucchini, chopped onion, and salt. Let it sit for 10 minutes to release excess moisture.
  3. After 10 minutes, squeeze out the excess moisture from the zucchini mixture.
  4. Add the eggs, milk, cheese, flour, black pepper, garlic powder, and oregano to the zucchini mixture. Mix well until combined.
  5. Pour the mixture into a greased pie dish.
  6. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Let it cool for a few minutes before slicing and serving.
