  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 cup dill pickles, sliced
  • 2 tbsp olive oil
  • ½ cup mayonnaise
  • 2 tbsp dill pickle juice

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Pat dry the chicken breasts and season generously with salt and pepper.
  3. In one bowl, combine panko breadcrumbs and Parmesan cheese. In another bowl, mix minced garlic with olive oil.
  4. Dip each chicken breast into the garlic-oil mixture, then coat thoroughly in the panko-Parmesan blend.
  5. Place the coated chicken in the baking dish and bake for 20-25 minutes until golden brown and cooked through.
  6. While baking, mix mayonnaise and dill pickle juice in a small bowl to create the sauce.
