  • 18 oz all-purpose flour (just over 4 cups)
  • ¼ cup + 1 Tbsp granulated sugar
  • 2½ tsp fine sea salt
  • 1 Tbsp + 1/2 tsp instant yeast
  • ½ cup + 2 Tbsp cold water
  • ½ cup + 2 Tbsp cold milk
  • 3 Tbsp unsalted butter, softened
  • 1¼ cups cold unsalted butter
  • 1 large egg
  • 1 egg yolk

Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast. Add cold water and milk; stir until a rough dough forms.
  2. Knead on a floured surface for about 5 minutes. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Prepare the butter layer by flattening cold unsalted butter between parchment paper; refrigerate until firm.
  4. Roll out the chilled dough into a rectangle. Place the butter square in the center and fold the dough over to encase it completely.
  5. Roll out and fold the dough into thirds like a letter three times, chilling between folds.
  6. Roll out the laminated dough into a rectangle; cut triangles and roll them up from base to tip.
  7. Let shaped croissants rise on a lined baking sheet for about an hour until doubled in size.
  8. Brush with an egg wash and bake at 400°F (200°C) for about 20 minutes until golden brown.
