Ingredients
- 1 pound Italian sausage (mild or spicy), casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes (with juices)
- 4 cups chicken broth
- 1 cup carrot, sliced
- 1 cup celery, sliced
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bag (9 ounces) refrigerated cheese tortellini
- 2 cups fresh spinach
- Grated Parmesan cheese for serving (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a skillet over medium heat, cook the Italian sausage until browned. Break it up with a spoon. Drain excess fat. Add the chopped onion and minced garlic to the skillet and sauté for 3-4 minutes until the onion is translucent.
- Transfer the cooked sausage mixture to your crockpot. Add the diced tomatoes, chicken broth, sliced carrots, sliced celery, Italian seasoning, salt, and black pepper. Stir to combine.
- Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours, until the vegetables are tender.
- About 30 minutes before serving, stir in the cheese tortellini.
- In the last 10 minutes of cooking, add the fresh spinach and stir until wilted.
- Serve the soup hot, garnished with grated Parmesan cheese and fresh parsley if desired.
