Savory Crockpot Pulled Pork Bowls for Effortless Dinners
Ingredients

- 1 medium Yellow onion
- 4 pounds Boneless pork shoulder or Boston butt
- 4 cloves Garlic
- 1 cup BBQ sauce
- 1/4 cup Apple cider vinegar
- 1 bag Coleslaw mix
- 4 stalks Green onions
- 1/2 cup Fresh cilantro leaves
- 2 tablespoons Lime juice
- 3 tablespoons Avocado oil or olive oil
- 1 tablespoon Honey
- 1 teaspoon Ground cumin
- 1/2 teaspoon Chipotle powder or cayenne pepper
- 2 cups Cooked rice
- 1 jar Pickles or jalapeño slices
- 1/2 cup Additional BBQ sauce
Instructions
- Layer the sliced onion in the bottom of the slow cooker.
- Remove netting from pork shoulder and place it on top of onions.
- Sprinkle minced garlic over the pork. Pour BBQ sauce and apple cider vinegar around the pork.
- Secure the lid and cook on LOW for 8-10 hours.
- Shred the pork in the slow cooker with forks, blending in juices.
- In a bowl, mix coleslaw ingredients and refrigerate.
- Serve by scooping rice into bowls, topping with slaw, pork, BBQ sauce, and garnishing as desired.
