Ingredients

  • 1 medium Yellow onion
  • 4 pounds Boneless pork shoulder or Boston butt
  • 4 cloves Garlic
  • 1 cup BBQ sauce
  • 1/4 cup Apple cider vinegar
  • 1 bag Coleslaw mix
  • 4 stalks Green onions
  • 1/2 cup Fresh cilantro leaves
  • 2 tablespoons Lime juice
  • 3 tablespoons Avocado oil or olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Chipotle powder or cayenne pepper
  • 2 cups Cooked rice
  • 1 jar Pickles or jalapeño slices
  • 1/2 cup Additional BBQ sauce

Instructions

  1. Layer the sliced onion in the bottom of the slow cooker.
  2. Remove netting from pork shoulder and place it on top of onions.
  3. Sprinkle minced garlic over the pork. Pour BBQ sauce and apple cider vinegar around the pork.
  4. Secure the lid and cook on LOW for 8-10 hours.
  5. Shred the pork in the slow cooker with forks, blending in juices.
  6. In a bowl, mix coleslaw ingredients and refrigerate.
  7. Serve by scooping rice into bowls, topping with slaw, pork, BBQ sauce, and garnishing as desired.
