Instructions

  1. Place chicken breasts or thighs in your slow cooker.
  2. Add chopped onion, sliced carrots, and sliced celery around the chicken.
  3. Pour in the chicken broth and sprinkle with thyme, rosemary, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
